EARLY YEARS MANHATTAN Chef Franz began his esteemed culinary career in Manhattan as Sous Chef at award-winning Chef David Bouley’s 2 Michelin star Bouley Bakery. Chef Franz then went on to Lespinasse, working as Sous Chef to the legendary Chef Gary Kunz for four years. Next, Chef Franz became Executive Chef at classic Raoul’s Le Bistro de Soho where he oversaw a staff of fifteen chefs and cooks. Starting a new family and searching for a move to the country, Chef Franz pursued the opportunity to work as Sous Chef at the famous Blue Hill at Stone Barns in Pocantico Hills, and to function as Consulting Chef in the development of Mr. Paul Newman’s Westport restaurant, The Dressing Room.
RECENT YEARS For the past 13 years, Chef Franz has been treating the residents of the Pound Ridge, NY area to his fabulous food as Chef of North Star Restaurant. The New York Times cited the restaurant as a Must Visit destination and described Chef Franz’s meal as “exceedingly pretty, without showboating, and hugely satisfying.”
